If there is one food that quietly holds Panama's everyday cuisine together, it is rice.
It arrives beside beans, chicken, fish, stewed meat, vegetables and seafood. It is served at family lunches, roadside restaurants, fondas and homes across the country. For many Panamanians, a meal without rice can almost feel incomplete.
But behind that familiar mound of white rice is a surprisingly large agricultural industry.
Panama grows tens of thousands of hectares of rice every year, employs thousands of producers and has developed an agricultural system that takes advantage of one of the country's greatest natural resources: water.
And perhaps the most fascinating thing about growing rice in Panama is that, despite the country's famously wet tropical climate, most Panamanian rice isn't actually grown under irrigation.
Rice is a national staple
The importance of rice to Panama cannot really be overstated.
The country's Ministry of Agricultural Development, MIDA, describes rice as the grain most consumed by Panamanians.
That makes rice much more than another agricultural commodity.
It is a food-security issue.
When rice production is good, Panama has a stronger domestic supply. When production falls, the country has to look increasingly toward imports.
This is why the government pays such close attention to the rice harvest, production costs, yields and imports.
In other words, when you sit down to a plate of arroz con pollo in Panama, you're eating the final product of an agricultural system that has enormous economic and political importance.
Panama's rice fields are everywhere
Rice production isn't concentrated in just one tiny corner of the country.
The major rice-producing regions include Chiriquí, Panamá Este, Coclé, Veraguas, Darién, Los Santos and Herrera.
Chiriquí is particularly important.
During the 2023–2024 agricultural year, MIDA reported that Chiriquí was Panama's largest rice-producing region by planted area, accounting for about 26% of the country's 84,046 hectares planted by late January 2024. Panamá Este followed with about 21%, while Coclé and Veraguas each accounted for roughly 14%.
For anyone familiar with Chiriquí, this makes perfect sense.
The province has an extraordinary mixture of fertile agricultural land, rivers, rainfall and different elevations.
It is famous for coffee and other crops, but rice is an enormous part of its agricultural landscape as well.
The surprising dominance of rain-fed rice
Here's one of the most interesting facts about rice farming in Panama.
You might imagine that a tropical country would have enormous networks of irrigation canals covering its rice fields.
But Panama relies overwhelmingly on rain-fed agriculture, known locally as secano.
During the 2023–2024 agricultural year, approximately 89.5% of the rice area reported by MIDA was rain-fed, while only about 10.5% used irrigation.
Earlier in the same agricultural cycle, the proportion was even higher, with more than 92% of planted rice classified as secano.
That tells you something important about Panama's climate.
Farmers aren't necessarily pumping enormous quantities of water onto their fields.
Instead, they are timing cultivation around Panama's seasonal rainfall.
The importance of the rainy season
Rice needs water.
Panama has plenty of it.
But the challenge isn't simply having rain. The challenge is having rain at the right time.
Farmers have to prepare their fields, plant their seeds and manage the crop according to weather patterns.
This is one reason Panama's agricultural calendar is so closely connected to the country's wet and dry seasons.
Too little rain can damage a crop.
Too much rain can create completely different problems.
And unpredictable rainfall can disrupt the entire agricultural cycle.
MIDA has specifically noted that climate variability has affected the timing of rice planting and harvesting in Panama.
So even in one of the wettest countries in Central America, rice farmers cannot simply assume that water will always arrive exactly when they need it.
What does a Panamanian rice field actually look like?
Forget the stereotypical image of endless Asian rice terraces climbing mountainsides.
Much of Panama's commercial rice production looks considerably more industrial.
Large, relatively flat agricultural fields are prepared using tractors and other machinery.
The soil is worked.
Fields are levelled where necessary.
Seeds are planted.
The crop develops under the tropical sun and seasonal rainfall.
And eventually enormous harvesting machines can enter the fields.
Modern rice farming in Panama is increasingly mechanized, particularly in commercial operations.
MIDA has specifically reported on the progress of mechanized rice planting, reflecting the scale of the modern industry.
It is a very different world from a small backyard vegetable garden.
The scale is enormous
During the 2023–2024 agricultural year, Panama had programmed approximately 92,757 hectares of rice cultivation involving around 1,680 producers.
The projected harvest was approximately 437,106 metric tonnes, with an expected average yield of 104 quintals per hectare.
By late January 2024, MIDA reported more than 84,000 hectares planted and more than 64,000 hectares harvested. The harvested area had already produced more than 6.36 million quintals of rice described in the agricultural reports as húmedos y sucios — literally "wet and dirty" — referring to grain before final drying and cleaning.
Those numbers are difficult to visualize.
Imagine tens of thousands of hectares covered with rice plants.
Then imagine harvesting all of it.
Then transporting the grain.
Then drying it.
Then cleaning it.
Then milling it.
Then packaging it.
Then distributing it around the country.
That is the machinery behind Panama's everyday bowl of rice.
"Wet and dirty" rice
The phrase arroz húmedo y sucio is particularly interesting to anyone unfamiliar with agricultural statistics.
The rice leaving the field isn't ready to be put into a supermarket bag.
Freshly harvested grain contains considerable moisture and still contains foreign material and other matter that must be removed during processing.
The harvested product therefore has to go through drying, cleaning, milling and other post-harvest processes before becoming the polished rice people recognize.
This is an important reminder that harvesting isn't the end of rice production.
It is only the beginning of the post-harvest stage.
Rice doesn't grow overnight
The crop requires considerable planning.
Before the seeds ever enter the ground, farmers have to prepare the soil.
Fields must be worked and prepared.
Planting dates need to be considered.
Seed varieties have to be selected.
Fertilization and weed management have to be planned.
Water availability has to be considered.
Machinery has to be ready.
And ultimately the farmer has to think about harvest logistics.
This is why rice farming is much more complicated than simply planting seeds and waiting for rain.
Every hectare represents an investment.
And every failed hectare represents a serious financial loss.
The cost of producing rice
Panama's government has been increasingly focused on improving rice productivity because production costs are significant.
MIDA reported in 2024 that rice production costs over the preceding five years had been approximately B/.2,300 to B/.2,700 per hectare, while yields ranged from roughly 104 to 97 quintals per hectare.
That gives you a sense of the financial risk involved.
A farmer doesn't simply invest in seeds.
There are costs associated with land preparation, machinery, fuel, fertilizer, crop protection, labour, transportation and harvesting.
If yields fall while costs rise, the farmer's margins can become extremely tight.
And because rice is such an important staple, those problems can eventually affect consumers as well.
Why Chiriquí is such a big rice region
Chiriquí deserves particular attention.
It consistently appears at the top of Panama's rice-production statistics.
During the 2023–2024 cycle, the province had more than 21,800 hectares planted by late January 2024, representing about 26% of the country's total planted area at that point.
The province's agricultural importance is easy to understand.
Chiriquí has extensive agricultural plains and valleys, abundant water and a long history of commercial farming.
It also has something particularly valuable for farmers:
different microclimates within a relatively compact area.
This allows the province to support an extraordinary variety of crops.
Rice is simply one of the largest.
Rice and the Panama Canal are not the same water story
It is easy for visitors to assume that Panama's enormous water resources make irrigation effortless.
But the country's water isn't automatically available for agriculture.
Rainfall is geographically and seasonally variable.
Agricultural water competes with other needs.
And building and maintaining irrigation infrastructure is expensive.
This is why the dominance of rain-fed rice is so important.
Rather than creating irrigation systems across every rice-growing region, farmers have historically relied heavily on the natural rainfall cycle.
It is a very Panamanian solution:
work with the climate rather than completely trying to control it.
But climate change complicates everything
That strategy becomes more difficult when rainfall patterns become less predictable.
MIDA has recognized climate variability as a challenge for the timing of rice planting and harvesting.
For a rain-fed farmer, changing rainfall isn't a minor inconvenience.
It can completely change the economics of a season.
If the rains arrive late, planting may be delayed.
If they stop early, the crop can suffer.
If extreme rainfall arrives at the wrong time, fields can become difficult to work and harvest.
And if dry periods become more severe, irrigation becomes increasingly valuable.
This is one reason Panama is investing more attention in agricultural technology and improved production practices.
The push to "produce more with less"
MIDA has explicitly identified increasing yields while reducing production costs as a major objective for Panama's rice sector.
The government has been working on what it calls NAMA de arroz, incorporating agricultural technology and improved practices intended to modernize production while also reducing greenhouse-gas emissions.
The basic idea is remarkably simple:
produce more rice from the same land using fewer resources.
Better seeds.
Better fertilizer management.
Better water management.
Better machinery.
Better timing.
Better technical assistance.
Better agricultural data.
All of these can potentially increase the amount of rice produced per hectare.
The farmer versus the imported bag
There is another major issue surrounding rice in Panama: imports.
Because rice is so important to the population, Panama cannot simply allow domestic production to collapse.
MIDA has repeatedly highlighted concerns about imports arriving during domestic harvest periods, because imported rice can put pressure on local producers.
The government has therefore used policies and compensation mechanisms to support domestic producers.
This isn't just about protecting farmers for sentimental reasons.
It is about food security.
Imagine Panama becoming heavily dependent on imported rice and then encountering a global supply disruption, export restriction or major price increase.
Suddenly, something as simple as a bowl of rice becomes an international geopolitical problem.
Domestic agricultural production gives the country a degree of protection.
Rice is also a cultural crop
Statistics don't explain why rice matters so much to Panamanians.
For that, you need to sit down at a Panamanian table.
Rice appears with beans.
Rice appears with stewed chicken.
Rice appears with seafood.
Rice accompanies fried foods.
Rice is mixed with vegetables.
Rice becomes arroz con pollo.
It appears in countless combinations that differ from one household to another.
And because it is so neutral, it acts almost like a canvas.
The main dish can change completely while the rice remains.
That is why the crop has such enormous cultural importance.
It isn't necessarily the star of the meal.
It's the foundation underneath it.
A crop shaped by Panama's geography
One of the fascinating things about rice farming in Panama is how closely the crop reflects the country's geography.
The country is narrow.
It has two oceans.
It has mountains running through much of its interior.
It has enormous rainfall differences.
It has tropical lowlands, agricultural plains, river valleys and seasonal dry areas.
And rice farmers have adapted to those conditions.
That is why you find rice cultivation across such a wide range of provinces.
From Chiriquí in the west to Darién in the east, rice follows the agricultural potential of the country.
The hidden landscape tourists rarely see
Most visitors to Panama encounter a very specific version of the country.
They see Panama City.
They visit the Canal.
They go to Bocas del Toro.
They travel through Boquete.
They visit beaches.
They hike in cloud forests.
But drive through agricultural Panama and another country appears.
There are tractors instead of tour buses.
Rice fields instead of beaches.
Harvesters instead of taxis.
Grain trucks instead of backpackers.
It is an enormous part of the country that many foreign visitors never really notice.
And during planting and harvesting seasons, you can see just how much of Panama's landscape is dedicated to feeding its own population.
The next time you eat rice in Panama
Look at it differently.
That pile of rice on your plate might have begun as a tiny seed planted months earlier.
A farmer prepared the soil.
Rain arrived.
The plants grew beneath Panama's tropical sun.
Fertilizer and crop management helped them develop.
Machinery eventually entered the field.
The grain was harvested while still wet.
It was transported and processed.
It was dried and cleaned.
It went through the supply chain.
And eventually it ended up in a kitchen.
Maybe in Panama City.
Maybe in a tiny restaurant in Chiriquí.
Maybe in a family home in Veraguas.
And finally, on your plate.
The numbers alone tell an impressive story: tens of thousands of hectares, more than a thousand producers, hundreds of thousands of tonnes of projected production and a crop overwhelmingly dependent on rainfall rather than irrigation.
But the real story is even more fascinating.
Rice is Panama's quiet agricultural backbone.
It doesn't have the glamour of coffee, the romance of cacao or the international fame of the Panama Canal. But it is one of the crops that most directly connects Panama's land, climate, farmers, machinery, economy and everyday culture.
And every time a Panamanian sits down to a plate of rice, they are participating in that story.
